List of Ingredients Serves 3-4 | Prep Time 10 minutes | Cook time 20 minutes2 servings (160g) Kaslo Sourdough Classic Rotini Pasta1 tablespoon coconut oil1 tablespoon ginger, peeled and grated4 garlic cloves, minced1 red bell pepper, sliced1 lb. chicken breast, chopped2 tablespoons curry powder1 can coconut milk3 cups chicken broth1/2 teaspoon Himalayan saltPepper to taste1/2 lime, juiced Instructions Bring a pot of water to a boil and cook noodles al dente (4 minutes).Heat coconut oil in a saucepan over medium-high heat. Cook ginger and garlic until fragrant, about 1-2 minutes.Add chopped chicken, and cook for about 5 minutes, add bell pepper slices.Add curry powder, coconut milk, and broth. Bring to a simmer and cook for an additional 10 to 15 minutes, or until chicken is cooked through.Add salt and pepper to taste. Divide noodles and curry soup into bowls.
